In addition to the components that you’ve come to love in this blend – Sangiovese, Syrah and just a touch of Evolution Lucky No. 9 White, we’ve added the Italian red grape: Montepulciano. This addition adds more fruit to the blend to create a softer, rounder, fruitier flavor profile. How Do You Remove the Alcohol?

The alcohol is removed via thin-film vacuum distillation. This process gently extracts the wine’s most volatile aromas in what is called an “essence strip”. This essence is then added back after the alcohol is removed, allowing us to retain much of the wine’s original profile.
