Evolution Big Time Red has a new step with the release of the 9th edition. In addition to the components that you’ve come to love in this blend – Sangiovese, Syrah and just a touch of Evolution Lucky No. 9 White, we’ve added the Italian red grape: Montepulciano. This addition adds more fruit to the blend to create a softer, rounder, fruitier flavor profile. This wine is structured and rich with flavors of cherry and plum pie filling, black cherry and red currants and hints of savory notes throughout the palate.
Our goal with this red blend is to make it like its companion – appear effortless, easy-to-drink and food-friendly but in reality be quite complex. This makes it fun. Fun to blend and fun to drink! This is a big red blend using a couple of traditional Italian varietals and one traditional French varietal. Also, like the French Rhône’s we add a splash of white wine, just a small percentage of our Evolution Lucky No. 9 White, to bring in another layer of complexity that lifts the aromatics, color and flavor. All these aspects together showcase the evolution from old world wines to new world wines. Cheers!
Aromatic wine with heaps of citrus notes like lychee and lime zest, hints of tropical fruit and just a touch melon. Bright acidity lingers on the finish to balance with residual sugar.
The Willamette Valley never fails to produce beautifully fruit flavors in its Pinot. This wine is packed with bright red fruit flavors, heaps of jammyness, a dash of cherry pie, and a hint of toasty oak on the finish.
Our 2020 Pinot Gris is bursting with fragrance, featuring peach, ripe pear, honeysuckle, and granite. On the palate, the peach stands out, but is also joined by pineapple and apricot. This is a bright and expressive wine, with crisp acidity and a refreshing finish.
The 2021 Rose shines with notes of ripe strawberry, cantaloupe, apricot and star fruit on the nose. On the palate, the strawberry and cantaloupe carry through, as the apricot gives way to
fresh nectarine.
The Bluebird Cuvée Brut Sparkling is designated as a Brut level of sweetness. The nose of this wine is expressive with fresh lemon, under-ripe pear and minerality, complemented by white flowers. On the palate this wine is bright and crisp, as the lemon and pear shine through.
Our 2019 Dundee Hills Estate Chardonnay has notes of candied lemon peel, yellow apple, and honeydew, as well as vanilla and yellow flowers. On the palate, the yellow apple remains, but the lemon evolves to Meyer lemon zest, and the honeydew becomes more like cantaloupe. Additionally, there is a delightful note of vanilla and butter on the palate to round it out.
On the nose, this wine shows notes of black cherry and pomegranate, complemented by an earthy blend of truffle, wet forest floor, and baking spices. On the palate, the fruit remains the same, but is joined by fresh raspberry, as well as cedar and dry leaf.
This wine pairs beautifully with seared salmon and fondant potatoes, as well as spiced lamb burgers or carnitas.
Our 2016 Sparkling Rosé has a beautiful salmon pink hue to it. The nose has strawberries, hints of raspberries, and toasted caramel. Strawberry jam with bright acidity on the palette. This wine is bigger and weighter then our previous vintages of sparkling rose but that speaks to the 2016 vintage of Pinot Noir in Oregon.
Our 2018 Big Tree Block Pinot Noir has a light and floral nose with bright fruit.
The palate has dark cherry, pomegranate and rhubarb notes
Our 2018 Orchard Block Pinot Noir has notes of tobacco, pomegranate, raspberry and black cherry on the nose, as well as a subtle hint of chantrelle and nutmeg. On the palate, pomegranate and raspberry shine through with red cherries and a subtle dash of clove. A delicate Pinot Noir, the 2018 Orchard Block has lower tannins and brighter acidity.
